ORGANIC BIRCH SAP

From Sothys Advanced Research. The sap is harvested in the area bordering Cantal and Corrèze, a few kilometers from the Jardins de Sothys in Auriac. Its manual harvest is carried out by a professional on rigorously selected trees (age, diameter, etc.). Respectful of the environment, it begins at the end of February-beginning of March when the sap rises in the birch and ends before the hatching of the first buds.
